A Taste of CWS: St. Patrick’s Day Edition

Soda Bread

Ingredients 4 c. all-purpose flour, plus more for surface 1/4 c. sugar 1 tbsp. baking powder 1 1/2 tsp. salt 1 tsp. baking soda 6 tbsp. cold butter 1 c. dried currants 2 tsp. caraway seeds 1 1/2 c. buttermilk

Directions Preheat the oven to 350°F. Grease a large cookie sheet. In a large bowl, combine flour, sugar, baking powder, salt, and baking soda. With a pastry blender or 2 knives used scissor-fashion, cut in butter until mixture resembles coarse crumbs. Stir in currants and caraway seeds, then buttermilk until flour is evenly moistened. On a well-floured surface, knead dough 8 to 10 times just until combined. Shape into a flattened ball; place on cookie sheet. Cut 1/4-inch-deep "X" into top. Bake loaf 1 hour or until a toothpick inserted in the center comes out clean. Cool completely on the wire rack.

Corned Beef and Cabbage

Ingredients Corned Beef and Vegetables 1 3-lb piece corned beef (with spice packet, if included) 1 12-oz bottle pale ale 1 medium onion 2 cloves garlic 2 dried bay leaves 2 tbsp. olive oil 1 small head green cabbage (about 1 3/4 lb), cut into 8 wedges Chopped parsley, for serving

Directions Place corned beef in a large pot. Add beer, onion, garlic, bay leaves, 1½ cups water, and contents of spice packet (if included) and bring to a boil. Reduce heat and simmer, covered, until tender and easily pierced with a fork, 2½ to 3 hours. Thirty minutes before corned beef is finished, heat the oven to 425°F. Heat a large cast iron skillet on medium-high heat. Season cabbage with ½ teaspoon each salt and pepper. In batches, add 1 tablespoon oil and 4 pieces cabbage and cook until golden brown, 3 minutes per side; transfer to baking sheet and repeat. Transfer beef to a foil-lined baking sheet. Transfer beef and cabbage to the oven and roast until the cabbage is just tender and beef has browned, 12 to 15 minutes. Transfer beef to a cutting board and thinly slice. Serve with roasted cabbage and sprinkle with parsley, if using.

Classic Irish Stew

Ingredients 3 tbsp. extra-virgin olive oil, divided 2 lb. beef chuck stew meat, cubed into 1" pieces Kosher salt Freshly ground black pepper 1 onion, chopped 2 medium carrots, peeled and cut into rounds 2 stalks celery, chopped 3 cloves garlic, minced 3 medium russet potatoes, peeled and cut into large chunks 4 c. low-sodium beef broth 1 (16-oz.) bottle Guinness 2 tsp. fresh thyme Freshly chopped parsley, for serving

Directions In a large Dutch oven over medium heat, heat 2 tablespoons oil. Season beef with salt and pepper, then add to pot and cook on all sides until seared, 10 minutes, working in batches if necessary. Transfer beef to a plate. In the same pot, add remaining tablespoon oil and cook onion, carrots, and celery until soft, 5 minutes. Season with salt and pepper. Add garlic and cook until fragrant, 1 minute. Add beef back to Dutch oven, then add potatoes, broth, beer, and thyme. Bring to a boil, then reduce heat to a simmer. Season with salt and pepper. Cover and let simmer until beef and potatoes are tender, 30 minutes. Garnish with parsley before serving.

Luck of the Irish Puppy Chow

Ingredients 12 oz Wilton Green Candy Melts 1 tsp shortening 1 cup powdered sugar 6 cups Chex Cereal (We prefer Rice Chex, but you can use any flavor) 1/2 cup white chocolate morsels 1 – 1 ½ Cups Green and St. Patrick’s Day themed candy, M&Ms, Luck Charms Marshmallows, sprinkles, etc. of your choice

Instructions Add candy melts to a microwave-safe bowl. Melt candy on 50% heat for 30 seconds at a time stirring in-between each. Add the shortening to make it creamier. Place the Chex mix inside a large freezer bag. Pour the melted chocolate in. Mix around until all cereal pieces are coated. Add in the powdered sugar to coat each chex piece. Empty coated Chex onto a baking sheet. Add all the candies and sprinkles to make it festive! Mix well with a spoon to combine.
